Chicken and Barley Soup
The weather people are calling for more snow this week, we needed some food to warm up. Along with chicken and barley, the soup has carrots, onions, celery, and mushrooms. A great winter soup!

Bacon

Prettiest BLT ever
Tom forgot to eat breakfast to he used these veggies to lure a pig to his sandwich. This is Amana bacon with the McCarthy cut - really, if you call Amana Bacon and ask for the McCarthy cut, you will get 8 slices to the pound.

Fried Chicken

Pan fried chicken: The chicken is first brined, then breaded and fried.
Potatoes: Tom bought a new fancy mandolin and this was his first chance to slice potatoes on it. They are really thinly sliced and layered with onions, thyme, salt, and butter.
Broccoli: Steamed and then covered in lime butter.

Valentine's Day Weekend

Eggs and Potato Pancakes
Eggs filled with homemade herbed cheese. We had leftover mashed potatoes, so Tom made potato pancakes. Topped with scallions.

Doughbellies
Fried pizza dough topped with butter, angel hair pasta, and homemade marinara. I was so excited about eating them that I forgot to take a picture until seconds were served.

Valentine's Day Dinner
Tequila lime shrimp over egg noodles, with red and green onions. The broccoli is topped with lime butter. This was an amazing dish and going on the list of my favorites.

Ready for the Super Bowl!

I came home to find this. We are so ready for the snow and the super bowl.

Rice and Bread

Bread
I went to Target tonight and they had this new grocery section and had take and bake breads. So I got the ciabatta bread and its very good. I also got a loaf of Italian, we'll try that later.

Rice, sausage, and cheese
This is one of our staples for an easy meal. Rice with chicken bouillon, scallions, and jalapeno. Then we put garlic chicken sausage in it and cook it on the stove for 35 minutes. After its done, throw some cheese in and we have a great meal! Its served with the sliced ciabatta.

Sick

Grilled turkey and cheese with tomato soup
I've had a horrible cold since Friday and I'm finally starting to get better. Tom made this for me last night, a grilled turkey and cheese served with tomato soup. It was fantastic and warm and perfect for when you feel sick.

Hot chicken salad
Now Tom is sick with a horrible sinus infection, so I made dinner. We had chicken breasts and I wanted to use those. I found a recipe for hot chicken salad with onions and celery and pecans and mayo. I think it was good too, but I still can't taste much. Tom said I could use his kitchen to cook this again, so it couldn't have been bad.

Plated chicken salad
Topped with breadcrumbs and cheese.
