Too lazy

Chicken Chili
So I've obviously been super lazy about posting, but we're trying to remember to take pictures at least! Tom made chicken chili and its topped with salsa and sour cream.

Nachos!
Football Sunday means nachos and beer. These are topped with black beans, salsa, cheese, jalapenos, and sour cream. Tom gets all the jalapenos.

Tom's lunch
Tom made hotdogs for lunch one day, with a pickle and mustard. He needed a lot of water after this meal.


Fritatta
Our normal fritatta has smoked turkey, boursin, and caramelized onions. This one had leftover chicken, regular onions, and american cheese. It was good too!

Hot dog bowl
We ran out of bread and Tom wanted to use his leftover hot dogs. So he made a bowl of hotdogs, pickles, onions, and cheese. He topped it with mustard, but he didn't take a picture of that.

Grits topped with 3 eggs over easy. And pepper. Lots of pepper.

Mexican Lasagna
This was my turn to make dinner, its an easy dinner of ground turkey, salsa, refried beans, tortillas, sour cream, and cheese.

Chicken chesapeake sausage, mashed potato cakes, and broccoli.
We had leftover mashed potatoes, so Tom made potato cakes with them! So amazingly good!

Crescent rolls!
Neither of us had had crescent rolls in forever. They are way better than I remember. Great appetizer!

A week of food

Crab Fritatta

On Tuesday's I can usually go into work a little late. Tom got up and made me a crab fritatta, with leftover crabcake. This weekend we were treated to dinner at http://www.timbukturestaurant.com/ where they are known for their crabcakes. Of course I couldn't finish mine, so we ate it for breakfast! I didn't finish the fritatta, and I ate the bagel for lunch.


Chicken and Dumplings

This is one of my favorite meals, so I asked Tom to make it. He can make both flat and puffy dumplings, these were the puffy kind. We've been eating it all week.

French Onion Soup

A little while ago Tom saw America's Test Kitchen and they had a recipe for French Onion Soup. He had made it in his own way before, but this way called for deglazing the pan every 15 minutes. He used sherry, but says next time he'll use white wine. I don't eat mammals, so this soup was not for me, but he says it was incredible and he'll make it again.


Jambalaya

This is another one of my favorites, we had it tonight. Tom makes this with chicken, shrimp, and usually chicken andouille. Since we couldn't find that, he used sundried tomatoes and basil chicken sausage. It was really good. We'll be eating this for awhile, which makes me very happy.

Chipotle


Turkey Burger, Broccoli with a chipotle bechamel sauce, and a pickle.

Turkey burger made with grated onions, chipotle, worcestershire, and butter. The broccoli is topped with a chipotle bechamel. Tom said the pickle is the vegetable, the broccoli has too much cheese on it to count.

Tom's Dinner

BBQ Sandwich

Since I don't eat mammals, Tom rarely bothers to make them. After Christmas we went to the store and he picked up a pork loin. He rubbed it with a creole spice blend and then roasted it at 275 for 6 hours. For a couple of days he would just eat a handful every time he walked by the fridge, but even that got to be too much. So he made BBQ out of the pork, using (and doctoring) Hillbilly's http://www.hillbillysbbqsteaks.com/ BBQ sauce. This is a sandwich he made, using 3 cups of BBQ and topping it with the previously seen coleslaw. Tom says this is why he's not losing any weight after the holidays.

Shrimp Etouffee

Shrimp Etouffee with lemon butter broccoli

Shrimp Etouffee is one of Tom's favorite meals, of course everything is from scratch. He served it with lemon butter broccoli. He thinks this etouffee was not spicy enough, I had fire coming out of my ears.


Jerry's Chocolate Ice Cream

For Christmas, Tom got the Kitchen Aid ice cream maker attachment. His first attempt was cinnamon ice cream, which was so good and incredibly rich. Tonight he made Jerry's (of Ben and Jerry) chocolate ice cream, which was made with both cocoa and unsweetened baking chocolate. It was perfect after the spice of the etouffee. As you can see, I didn't think of taking a picture until after I started eating. You can't just let ice cream sit there!

New Kitchen!

Its been a long time since I've posted a picture, but there is a good reason. We have a new kitchen! Our kitchen has been in a state of remodel for awhile and Tom has finished it! We were going to have a wonderful new kitchen dinner, but then we got 2 feet of snow and we were not going to the store before, during, or after a blizzard.

So now we're back to posting....


Southern...with a twist.

Pecan encrusted fried chicken, creole cole slaw, and rosemary garlic mashed red potatoes topped with a cajun gravy. The chicken must have been raised on the Dolly Parton farm, this is half of the breast. A wonderful way to welcome in our fully finished kitchen!
